KFC Original (Chicken) Recipe
6 cups of Crisco Shortening 1 egg well beaten 2 cups milk 2 cups flour 2 teaspoon ground pepper 3 tablespoon salt 1 teaspoon MSG 1/8 teaspoon garlic powder 1 dask paprika 2 frying chickens cut into 6 pieces
Place shortening into the the pressure cooker and heat over medium heat till the shortening reaches 400F. In a small bowl, combine the egg and milk. In a separate bowl, combine the remaining six dry ingredients. Dip each piece of chicken into the milk until fully moistened. Roll the moistened chicken in the flour mixture until well coated. In groups of four or five, drop the covered chicken pieces into the shortening and lock the lid. When pressure builds up, cook for 10 mins...

Burger King BK Broiler
INGREDIENTS:
Marinade 3/4 cup water 2 teaspoons ketchup 1 teaspoon salt 1/4 teaspoon liquid smoke 1/8 teaspoon pepper 1/8 teaspoon oregano dash of onion powder dash parsley
2 chicken breast fillets 4 sesame seed hamburger buns 1 1/3 cups chopped lettuce 1/4 cup mayonnaise 8 tomato slices
INSTRUCTIONS: 1. Make the marinade by combining the ingredients in a medium bowl.
2. Preparer the chicken by cutting each breast in half. Fold a piece of plastic wrap around each piece of chicken and pound the meat with a tenderizing mallet until it is about 1/4-inch thick and about the same diameter as the hamburger buns. Place the chicken into the marinade, cover it, and chill for at least four hours. Overnight is even better.
3. Preheat your barbeque or indoor grill to high heat. Grill the chicken for 3 to four minutes per side or until done.
4. Toast the faces of the hamburger buns in a pan or griddle, in a toaster oven, or facedown on the grill. Watch the buns closely to be certain that the faces turn only light brown and do not burn.
5. Build each sandwich from the top down by first spreading about a tablespoon of the mayonnaise on the toasted face of a top bun.
6. Spread about 1/3 cup of chopped lettuce over the mayonnaise.
7. Arrange two tomato slices on the lettuce.
8. Place a chicken breast on the toasted face of the bottom bun.
9. Flip the top part of the sandwich over onto the bottom and scarf out.
Serves 4.

tidbits: Liquid smoke is a flavoring found near the barbecue sauces and marinades. Use hickory-flavored liquid smoke if you have a choice.

Einten Bros. Bagels Eggss 4 Ways (Sante Fe Style) by: Todd Wilbur
This way is by far the most creative of the four ways you can have your bagel breakfast sandwich at Einstein Bros. Bagels. The salsa and jalapeno salsa cream cheese make for a slightly spicy affair that anyone who goes for Southwestern-style tastes will thouroughly dig. The sausage used here is a turkey breakfast sausage that you can find in most supermarkets (Wampler makes a good version that comes in a 1-pound tube and is sometimes found in the freezer section). You can also use small uncooked turkey breakfast links. Just squeeze the sausage out of the casing anf form your patties, then toss out the casings. In a pinch you can also use good old pork sausage. Either way you go, you're in for a tasty way to rev up your day.
INGREDIENTS:
-=Jalapeno Salsa Cream Cheese=- 8 ounces cream cheese 1/4 cup Ortega medium salsa 2 tablespoons minced jalapeno slices (canned) 1/8 teaspoon chili powder
6 ounces turkey breakfast sausage 3 large eggs, beaten (abput 2/3 cup) 2 bagels, sliced in half and lightly toasted 2 slices pepper jack singles 2 tablespoon Ortega medium salsa
INSTRUCTIONS:
1. First make your jalapeno salsa cream cheese by mixing all ingredients together in a small bowl. Cover and chill cream cheese until it's needed.
2. Make the turkey sausage patties by forming sausage into two 3-ounce patties that are about 4 1/2 inches in diameter. If you have time, form the patties on a wax paper and freeze them to make handling easier. They will shrink when cooking to just the right size.
3. Beat the eggs in a bowl, then measure half (about 1/3 cup) into a bowl with the same approximate diameter as the bagels. Microwave each bowl (separately) for 1 to 1 1/2 minutes on high, or until the egg is completely cooked.
4. Lightly toast all the bagel halves.
5. Spread about to teaspoons of the jalapeno salsa cream cheese on the toasted face of the bottom half of the bagel.
6. When the eggs are cooked, arrange them on the cream cheese on each bagel bottom.
7. Lay a slice of pepper jack cheese on ecah of the egg layers.
8. Arrange the sausage paty on top of the cheese on each sandwich.
9. Spread about 2 teaspoons of salsa on the toasted face of ecah of the top bages halves.
10. Top off the sandwiches with the top bagel halvesm slice each sandwich in half and serve while hot.
Makes 2 sandwiches.

Starbucks' Frappucino
Ingredients:
1/2 cup fresh espresso, chilled 2 1/2 cups lowfat milk (2 percent) 1/4 cup granulated sugar 1 tablespoon dry pectin*
Instructions:
Combine all of the ingredients in a pitcher or covered container. Stir or shake until sugar is dissolved. Chill and serve cold.
Makes 24 ounces.
Tidbits: To make the "Mocha" variety: Add a pinch (1/16 teaspoon) of cocoa powder to the mixture before combining.
To fake espresso with a drip coffee maker and standard grind of coffee: use 1/3 cup ground coffee and 1 cup of water. Brew once then run coffeee through machine again, same grounds. Makes about 1/2 cup fresh espresso to use in the above recipe. Run a pot of water through machinem without grounds, to clean.
*This is a natural thickener found in fruits that is used for canning. You can find it in the supermarket near the canning supplies. It is used in this recipe to make the drink thicker and creamier, and can be found in the original recipe. It does not add to the flavor and can be excluded if you don't care so much about duplicating the texture of the real thing. |
